Mushroom’s 🍄 and my mind circus 🎪
I love mushrooms 🍄 . I am obsessed. Last year I got a mushroom growing kit for my birthday. This year I got four more a Happy Birthday gift to myself. I’m excited it takes three weeks to get them, so I will prepare a spot for them and wait for their arrival. WARNING ⚠️ You have now entered my mind 🎪 circus! My new goal is to listen to TED talks every day. They are inspiring, helpful and remind me that there’s so much to learn and…

Strawberry N’ice Cream
The days are getting warmer here in Sacramento. It’s time for something cool, creamy, and refreshing. I have the perfect vegan treat for you, and it is This N’ice Cream. It is ALL fruit and the base bananas. N’ice Cream is by far the easiest and healthier alternative to its fatty, sugary counterpart ice cream. Enjoy my friends.

I’m wearing a dress today 🤯
I have hives all over my body, and they keep moving around to different spots. They are itchy, they aren’t gorgeous, and it’s not fun. I’ve been irritable, snapping at people that are just trying to be helpful. This morning before I got out of bed, I watched this TED talk about dressing on how you feel and align with who you are. I thought it was fascinating because lately, I’ve been in a sweatshirt and sweat pants (I don’t have sweat pants, so I use Timmys). They…

My New Buddy
A few nights ago I dreamed I had a little robot that flew above my shoulder. It was blue had wings and a long tail. When it detected anyone had bad intentions for me, the robot would beam them back away from my personal space. Other times just zap 💥 people just for being negative to me. If it knew the person was really toxic the robot would send a beam out and push them backward sending them far away from me. If they tried to come back…

Welcome to February 2021
My Love, How does it feel? Were here one month into 2021. On my end … it’s going. I have to apologize, I know that I was silent in January. I was dealing with a lot. I have to thank the universe for the emotional kamikaze January brought to me it was enough for the whole year. It was like the leftovers of 2020 slammed down on me in ONE month. The good thing about life is that it’s a wild ride and we never know what is…

Creamy Cauliflower Soup
An abundance of cauliflower in my house had me digging through my cookbooks looking for recipes. When I found this “Creamy Cauliflower Soup” I knew this was going to hit the spot. I went to work and made this delicious combination for dinner, and it did not disappoint. Everyone enjoyed the soup, and Neo enjoyed the scraps of cauliflower that fell to the floor.

🌶 Chili BBQ Sauce
A wonderful chili bbq sauce tastes great on anything you put BBQ sauce on. I was inspired by the BBQ Seitan Brisket I made in culinary school. I put this together quickly yesterday when I wanted to add a more BBQ flavor to my Beyond Burger. Ingredients 🌶 2 tbsp dried mushroom powder (dried mushrooms ground in a spice grinder or purchased powder) 🌶 1 tsp chipotle powder 🌶 1 tsp Kashmiri Powder 🌶 1 tbsp tomato paste 🌶 2 tbsp maple syrup 🌶 2 tbsp vermouth or…

Vegan Cheesy Sauce
So last night I was craving some cheesy sauce with my fries. I came up with this quick recipe. I’ll be working on the flavors with this to make a more spicy version but this is what I have so far. 🧀 1 cup Jack cheese 🧀 1 cup mozzarella 🧀 1 cup cheddar 🧀 1 can of coconut milk 🧀 1/4 to 1/2 cup of nutritional yeast 🧀 1 tsp Kashmiri powder Put 1 can coconut milk in a sauce pan Add the cheeses and wait for…

Kale Chips
I adapted this from Kris Carr’s Crazy Sexy Kitchen, a cookbook I recommend to everyone. I made a few changes not many because it’s perfect the way it is, I just didn’t use as much onion powder & salt. These are flavorful, crunchy, and delicious. I like to make a batch of these at the beginning of the week and eat them as a healthy alternative to chips.
