    This lively, colorful dish was enjoyed by the pickiest of eaters this Thanksgiving. Enjoy this last-minute recipe I threw together. Ingredients 3 pounds of Stokes Purple® sweet potato’s 1 tsp Himalayan sea salt 1 can of coconut milk 1 tsp smoked salt 1 tsp chopped garlic 1 batch of Vegan Garlic Parmesan (recipe below) Directions Stream potatoes until fork tender while hot using a hand mixer mix in coconut milk and add dry ingredients slowly.
