This lively, colorful dish was enjoyed by the pickiest of eaters this Thanksgiving. Enjoy this last-minute recipe I threw together.
3 pounds of Stokes Purple® sweet potato’s
1 tsp Himalayan sea salt
1 can of coconut milk
1 tsp smoked salt
1 tsp chopped garlic
1 batch of Vegan Garlic Parmesan (recipe below)
Stream potatoes until fork tender while hot using a hand mixer mix in coconut milk and add dry ingredients slowly.
Vegan Garlic Parmesan
1/2 cup of nutritional yeast
1 tsp of garlic
1/4 tsp of Himalayan sea salt
Mix 1/2 cup of nutritional yeast with 1 tsp of garlic and 1/4 tsp of Himalayan sea salt.
Serve and watch as people dine in delight on these healthy, delicious, colorful potatoes.

- Steam potatoes in a steamer basket.
- Wait for them to be fork-tender, then pull from heat.
