Purple Mashed Potatoes

- 3 lbs Stokes Purple® Sweet Potato’s
- 1 tsp Himalayan Sea Salt
- 1 can coconut milk
- 1 tsp smoked salt
- 1 tsp garlic granules
- 1 batch Vegan Garlic Parmesan (recipe below)
Vegan Garlic Parmesan
- 1/2 cup nutritional yeast
- 1 tsp garlic granules
- 1/4 tsp Himalayan sea salt
Steam potatoes in a steamer basket.
Wait for them to be fork-tender, then pull from heat.
While potatoes are hot, using a hand mixer, mix in coconut milk and slowly add dry ingredients, including the vegan garlic parmesan.
